Kid Friendly Bran Muffins



Kid Friendly Bran Muffins
(Can be made sugar-free)
Yield: 24 muffins
Preheat: 375F

3 Cups Raisin Bran or Bran Flakes Cereal
2 Cups 1% (low-fat) Milk
2 Eggs, beaten
1/2 Cup Unsweetened Applesauce
2 tsp Vanilla
3 Cups Whole Wheat Flour
1 Cup Honey
1 TBSP + 2 tsp Baking powder
1/2 tsp Baking Soda
1/2 tsp Salt

Topping

2 tsp Cinnamon
4 TBSP Sugar (or sugar substitute like Splenda)
(I just tried brown sugar, and WOW!)

1. Soak cereal in milk for 10 minutes.
2. Add eggs, applesauce, vanilla and honey.
3. Mix well.
4. Add flour, baking powder, baking soda, and salt.
5. Mix until moistened, batter will still have lumps.
6. Fill greased or lined muffin tin about 1/2 to 2/3 full.
7. Mix together sugar and cinnamon and sprinkle on muffins.
8. Bake in 375F oven for 20 minutes or until done.

Note: I've been trying to find ways to make healthier food that the whole family will eat. This morning, I concocted this recipe from another one I found. I know, I know, can something that healthy possibly taste that good? Just ask my kids. They love them! Josie, our muffin-hating daughter ate more than anyone else. Jerry has already requested more. These are very moist bran muffins and with the cinnamon topping, you can imagine that you're eating a high fat, fiber-free muffin loaded with sugar.

Now to try them on Daddy when he comes home :o) Keith is slowly coming around to the idea of whole wheat flour and is a very picky muffin eater. Enjoy!
