Breakfast Burritos

Tired of cereal and toast? Need a quick, easy breakfast idea? Try these breakfast burritos. I made them for our men's prayer breakfast last week and they were a big hit! I froze the left-overs and they re-heat very nicely.

10 Large flour tortillas
1 dozen eggs
1/2 cup salsa
2 TBSP minced onion
salt and pepper to taste (Remember, most breakfast meat is salty, so don't over do it.)
1 pound breakfast meat
About 30-40 tater tots, broken up
1/3 pound of cheese, grated

Brown meat in skillet/frying pan. Remove. Drain excess fat (I wiped out the skillet with paper towels.) Put eggs, onions, salsa, salt and pepper in the pan (You could add cheese at this point, I added the cheese separately since we have a man in the church who is lactose intolerant.) and scramble-fry them. Add meat and tater tots to eggs. Divided egg mixture and shredded cheese between 10 tortilla shells and roll them making sure to fold in the ends as you go.

To freeze: Place burritos on a parchment paper (waxed paper or a light coating of non-stick spray should work too.) lined cookie sheet and freeze. Once frozen, wrap individually in paper towels and place in a freezer bag. To reheat, take frozen burrito and pop in the microwave for 2-4 minutes.

These are quite filling. The kids even like them! Of course, Daddy eats his with extra salsa, sour cream, and Tabasco sauce. They are also good for a quick and filling lunch or after church snack.
